Ingredients
1/4 cup unsalted butter
2 tbsp olive oil
2 Vidalia onions
1/4 cup Heineken ( amber beer)
1/4 Hennessy (cognac or brandy)
2 oz honey
1 tsp dried thyme
1 Bay leaf
4 cups no salt chicken stock or low sodium broth
1 cup no salt veal or beef stock or low sodium broth
Salt and pepper
Left over bread about 4 cups cubed
2 cups Gouda and Swiss cheese mixed
Directions
Caramelize the onions in the butter and olive oil until they are a deep brown color. This could take 45 minutes or more.
Deglaze with the beer and cognac
Add the thyme, bay leaf, stocks and honey
Bring to a simmer and reduce by about 1/3
Check seasoning and adjust with salt and pepper
Put soup in bowls and top with bread and cheese
Put in oven at 450 degrees for about 10 minutes until cheese is melted and browned. ( I like to put it under the broiler for a few minutes)
